KN (Original): Keto Chaffles

🙂 Use these like bread on a sandwich 🙂

I woke up this week to my news feed inundated with Chaffles pictures! I mean, some of the pics made my mouth water. Chaffles are pretty much CHEESE WAFFLES!!!!! People are using these as buns for sandwiches, burgers, fried chicken, McGriddles, you name it.

Needless to say, I fooled around with a lot of different recipes and here is the Ketonian Nerds’ version:

KETO CHAFFLES

Makes 8 servings

144.6 cal per serving| 10.6g fat| 1.5 net carbs| 10.3g protein

INGREDIENTS:

~*1 1/4 cup shredded mozzarella cheese

~*1 1/4 cup shredded fiesta cheese

~*2 eggs

~*4 tablespoon almond flour

~*2 teaspoon baking powder

DIRECTIONS:

Plug in your waffle maker. Mine is for mini waffles because there was a sale on Amazon.

Get out a medium sized bowl and measure out your cheeses, almond flour, and baking powder. In another bowl, whisk your 2 eggs so they turn yellow and fluff a bit. I seasoned my eggs with pink Himalayan salt and pepper.

Pour egg mixture on top of your other ingredients. This recipe makes (8) servings, so 4 sandwiches can be made! Separate the mixture into 8 cheese balls and load, one by one, in the center of your waffle maker so it doesn’t overflow out of the sides. I waited for the light on the waffle iron to go from red to green.
