

Being Keto is amazing, but sometimes you can be somewhere like the 4th of July Festival at the beach, for example, and smell funnel cakes all day. Well, when I got home, I needed to get to baking something I could have FAST. These cinnamon un-rolls came out SO moist and amazing that I was glad that I didn’t cheat on something that would’ve made me feel horrible the next day.
Without further ado, here’s the recipe:
KETO CINNAMON UNROLLS
(8 Servings)
unrolls: 228 cals| 20.4 fat| 3.9 net carbs| 6.7 protein
icing: 83.5 cal | 8.5g fat| .9 net carbs| 1.1g protein
INGREDIENTS (for keto doughie dough)
~* 1 1/2 cup of Almond Flour
~* 1 tablespoon of Baking Powder
~* 2 eggs
~* 1/2 cup of Sour Cream
~* 4 tablespoons of Butter
~* 1/8 cup of Coconut Flour
HOW TO MAKE DOUGH:
Put all ingredients in a bowl, folding and pressing ingredients to get a uniform consistency in color. This is what makes the dough so soft, we think. Put half the dough in a muffin or loaf tin, sprinkle 1 tablespoon of cinnamon and 1 tablespoon of stevia. Then add the rest of the dough on top and sprinkle the rest of the stevia and cinnamon on top. Bake at 350, for 20-25 min or until golden in color.
INGREDIENTS (for in between layers and also as topping before bake)
~* 2 heaping tablespoons of cinnamon
~* 2 heaping tablespoons of Stevia (great value brand)
INGREDIENTS: (for cream cheese icing)
~*4 oz cream cheese, room temp (takes 1 hour for it to get to room temp from fridge)
~* 2 tablespoons of butter, melted
~* 1/3 cup of Stevia, granulated
~* 1 tablespoon of vanilla extract
~* 1 teaspoon apple cider vinegar
~*1 tablespoon of heavy cream
HOW TO MAKE IT:
It is important to have the cream cheese room temp, but if you must, microwave it on defrost. We use my kitchen aid mixer with the whisk. Melt the butter, 1/3 cup of stevia, 1 tablespoon of vanilla, 1 teaspoon of ACV and 1 tablespoon of heavy whipping cream. Cube up cream cheese and press mixer on 3 or 4, for about 4 minutes. When the cinnamon unrolls come out of the oven, about 20 min until it is golden brown and your kitchen smells like cinnamon, this is when you can microwave the frosting about 20 seconds and pour over like a white glaze.
Serve with a delicious cup of coffee!
