These Cheesy Cauliflower Bites are nummy like rice cakes, only, no rice! Are you ready for the recipe?
INGREDIENTS:

~* Small head of cauliflower (or half a big one)
~* 1 1/2 aged white cheddar cheese, grated
~* 1/8 cup of Italian salad dressing
~* 1 large egg
HOW TO MAKE IT:
I have baked these in the oven before (400 degrees for 20 minutes). But then I got an air fryer for Christmas, and it is even yummier! A Nice crust and soft gooey insides.
Shred the small head of cauliflower in the food processor. I have done this in a blender before, or by hand. The food processor is a good kitchen tool to have, in my opinion. Bought mine on amazon for $20. Put the riced cauliflower in a microwave safe bowl and cook it for 2 minutes, This dries and softens the cauliflower.
Grate the 1 1/2 aged white cheddar cheese. I like the bigger, chunkier side. The reason we always try to grate our own cheese instead of buying the shredded kind is because they add starches to the pre packaged cheese. Ketosis is important to me, so this is my reason! Add one large egg and 1/8 cup of Italian dressing.
Now you are ready to get your hands dirty to form the balls of cheesy cauliflower bites. When I ball them up, I squeeze any excess liquids from it and put them into the air fryer basket.
